Ingredients

2 tbsp Vegetable Oil

1 tsp Cumin Seeds

1 tsp Mustard Seeds

3 cloves Green Garlic Cloves

1 Green Chilli

1 cup Onion (finely chopped)

1 tsp Kashmiri Red Chilli Powder

1 tsp Turmeric Powder

1 tsp Cumin Powder

1 tsp Garam masala Powder (Hot Spices)

1 tsp Coriander Powder

White pepper powder( 1/4 tsp )

1 cup Mixed Vegetables

1 cup Potatoes (boiled and diced)

1 tsp Lemon Juice

1 tsp Sugar

to taste Salt

Fresh Cilantro (roughly chopped)

Puff pastry (2 sheets)

1 large Egg

1 tsp Heavy Cream

Instructions

Heat oil in a skillet and add cumin and mustard seeds. Once they splatter, add garlic and chili; sauté until aromatic.

Add the onion and cook until translucent. Lower the heat and stir in the chili powder, turmeric, coriander, cumin, garam masala, and white pepper.

Increase heat to medium, add the frozen veggies and boiled potatoes. Season with salt, lemon juice, and sugar. Mix well and finish with fresh cilantro. Let the filling cool completely.

Prepare an egg wash by whisking the egg and heavy cream.

Roll out puff pastry sheets and cut each into four equal squares.

Place a spoonful of filling on one side of a square. Brush the edges with egg wash, fold over to form a triangle, and press the edges with a fork to seal.

Place patties on a lined baking tray and chill while preheating the oven to 425°F (220°C).

Brush the tops with egg wash and pierce the tops with a fork to allow steam to escape.

Bake at 425°F for 15 minutes, then reduce the heat to 350°F (180°C) and bake for another 15 minutes until golden and flaky.
