Ingredients

6 tbsp Oil

1 tbsp Mustard Seeds

2 cup Raw Mango (cubed)

2 cups Ginger (chopped)

to taste Salt

to taste Kashmiri Red Chilli Powder

3 pinch Asafoetida Powder (Hing)

1 inch Tamarind

3 tbsp Hot Water

Instructions

Wash the mango ginger thoroughly, peel the skin, pat dry using a paper towel, and cut into desired pieces or strips.

Soak tamarind in hot water and extract the pulp.

Heat oil in a wide, thick-bottomed pan over medium heat.

Add mustard seeds and let them splutter.

Add mango ginger pieces and fry for about 5 minutes on medium flame.

Add salt and tamarind extract. Cook for 10–12 minutes until the tamarind moisture evaporates. Stir occasionally to avoid burning.

Taste and adjust salt if needed.

Add fenugreek powder, red chili powder, and hing. Mix thoroughly.

tCook for another 3–5 minutes on low-medium heat.

Turn off the heat and allow the pickle to cool completely.
