Ingredients

2 cups Pearl Millet (Bajra Flour)

1 cup Gram Flour (besan)

1 cup Onion (finely chopped)

Ginger, chili, garlic paste (1 tbsp)

1 cup Coriander Leaves (chopped)

1 tbsp Sesame Seeds

1 tsp Black Pepper Powder

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Cumin Seeds

1 tsp Coriander Powder

4 tbsp Clarified Butter (Ghee)

to taste Salt

In a large mixing bowl, combine the bajra flour, gram flour, chopped onion, ginger-garlic-chili paste, coriander leaves, and all the dry spices (sesame seeds, pepper, turmeric, red chili, cumin, coriander powder, and salt).

Gradually add small amounts of water to the flour mixture to form a soft, pliable dough. Do not prepare the dough in advance, as it tends to dry out quickly.

Divide the dough into equal-sized portions and shape them into round balls.

To roll, place a dough ball between two sheets of butter paper or clean plastic. Use a rolling pin to gently flatten it into a paratha shape.

Heat a tawa (griddle) over medium heat. Carefully transfer the rolled paratha to the hot pan and peel off the top layer of paper.

Cook on one side, then flip. Apply ghee or oil to both sides and cook until golden brown spots appear and the paratha is well-cooked.

Serve hot with fresh curd, butter, or your favorite green chutney.
