Ingredients

1 1⁄2 cups Water

1 1⁄2 cups Pearl Millet (Bajra Flour)

to taste Salt

as needed Clarified Butter (Ghee)

Heat 1.5 cups of water in a deep-based pan. Add a pinch of salt if desired. Once the water is boiling, turn off the heat.

Immediately add the pearl millet flour to the hot water. Cover the pan with a lid and let it sit undisturbed for 5 minutes.

After 5 minutes, mix the flour and water well. Transfer the mixture to a mixing bowl. While it is still warm (handle with care), knead the mixture thoroughly until it forms a smooth, pliable dough.

Roll the dough into several small, uniform balls. Keep the remaining dough covered so it does not dry out while you work on each roti.

Dust your kitchen surface with a little dry millet flour. Take a dough ball, knead it briefly again with your hands, and flatten it using a rolling pin. Ensure the roti is slightly thicker than a standard wheat chapati.

Place the roti on a preheated pan over medium to high heat. Cook for about 5 minutes on one side, then flip. Cook for another 5 minutes on the other side.

While cooking the second side, use a clean cloth or napkin to apply gentle pressure around the edges of the roti. This will help it puff up slightly.

Once both sides are roasted well, remove the roti from the pan and apply a generous amount of ghee. Repeat the process for the remaining dough.
