Ingredients

2 cups Pearl Millet (Bajra Flour)

as needed Warm Water

Dry Flour (For dusting)

Wheat Flour (Optional, A small amount)

In a mixing bowl, take two cups of pearl millet (Bajra) flour. Gradually add warm water to the flour, kneading it well as you go. Continue to knead until the flour forms a soft, smooth, and pliable dough, similar to the consistency of standard chapati dough.

Once the dough is smooth, divide it into equal-sized portions and shape them into round balls.

Take a dough ball and gently press it with your palms. Dip it into some dry flour (parthan) to prevent sticking.

Gently pat the dough ball with your palms to widen it. If you have trouble with the edges cracking, you can mix in a small amount of wheat flour for better binding. Alternatively, you can carefully roll it out with a rolling pin using very light pressure; do not apply too much force, or the roti will break.

Heat a flat pan (tawa) on medium flame. Place the rolled roti onto the hot pan and let it cook until one side is partially done. Flip the roti to cook the other side.

Continue to cook on a medium flame, rotating occasionally, until both sides have light brown spots. Gently press the edges to help the roti puff up nicely.

Once cooked through, remove the roti from the pan and serve hot.
