Ingredients

1 cup Sorghum Flour (Jowar)

1 cup Water

1 tsp Cumin Seeds

1 tsp White Sesame Seeds

to taste Salt

as needed Oil

Chopped Fresh Coriander

to taste Black Pepper

Ghee ( for brushing)

In a deep-based pan, heat one cup of water until it reaches a boil. Add the coarsely crushed cumin seeds, white sesame seeds, and salt to the water.

Once the water is boiling, turn off the heat. Add the sorghum flour (jowar atta), finely chopped coriander, and crushed black pepper to the pan. Mix everything thoroughly.

Cover the pan with a lid and let the mixture rest for 5 minutes. This helps the flour absorb the moisture and makes the dough easier to work with.

Transfer the mixture to a bowl and knead it into a soft, smooth dough. Once finished, apply a little oil to the surface to keep it supple.

Divide the prepared dough into equal-sized balls. Keep any dough you are not immediately using covered with a wet cloth to prevent it from drying out.

Take a dough ball and dip it into dry flour. Using a rolling pin, gently roll it into a round roti. To ensure it doesn't stick and remains uniform, lift and rotate the roti while rolling rather than pressing in one spot.

Place the rolled roti on a preheated pan (tawa). Allow it to cook slightly on both sides.

Once partially cooked, transfer the roti directly to an open flame to cook both sides until it puffs up nicely. Alternatively, you can continue cooking on the pan by pressing it down gently with a napkin.
