Ingredients

1 cup Sorghum Flour (Jowar)

1 medium Tomato (finely chopped)

1 small Onion (finely chopped)

handful Spring Onion Greens

1 as needed Green Chilli

1 tsp Red Chilli Powder

to taste Salt

1 cup Water

Ghee or Oil (1 tsp )

Green Garlic (finely chopped)

In a mixing bowl, combine 1 cup of jowar flour with 1 finely chopped medium tomato, 1 small finely chopped onion, a handful of chopped spring onion (green part), 1 chopped green chili, a handful of fresh coriander, and a small bunch of chopped green garlic.

Add 1/4 teaspoon of red chili powder, salt to taste, and 1 teaspoon of ghee (or oil) to the bowl. Mix everything thoroughly. 3. Knead the dough: Gradually add approximately 1/2 cup of water to the mixture to bind it into a soft, pliable dough.

Divide the dough into two equal portions and roll them into balls using your hands.

Grease your hands with a little water to prevent sticking. Flatten a dough ball by pressing it with your fingers into a round, slightly thick roti shape. You can do this on a flat surface or directly onto a pre-greased hot tawa (griddle).

Place the flattened roti on the medium-heated tawa. Cook on one side, then carefully flip it using a gentle hand to prevent breaking.

Apply a little ghee or oil on both sides, and continue to cook on medium-to-low heat until the roti is golden brown and crispy on both sides. Serve warm with curd, pickles, or butter.
