Ingredients

1 cup Basmati Rice

3 cup Green Gram Dal (Moong Dal)

Vegetables:

Cauliflower : Finely chopped florets

handful French Beans (chopped)

handful Carrot (chopped)

1 large Onion (finely chopped)

Aromatics & Spices:

few Ginger (finely chopped)

1 tsp Cumin Seeds

A small piece Cinnamon

pinch Asafoetida Powder (Hing)

Cooking Fat:

as needed Clarified Butter (Ghee)

Other:

3 cups Water

to taste Salt

Thoroughly soak the rice and moong dal in water for at least one hour before starting.

Finely chop the cauliflower florets, beans, carrots, and the large onion.

Prepare your chopped ginger and gather your spices (cumin seeds, cinnamon, and asafoetida powder).

Heat the ghee in a large, deep cooking pot.

Add the cumin seeds and allow them to crackle, then stir in the cinnamon and asafoetida powder.

Add the chopped ginger and sauté briefly to release its flavor.

Add the prepared vegetables (carrots, beans, and cauliflower) to the pot and sauté for about five minutes.

Mix in the soaked moong dal and cook for another minute.

Add the soaked rice to the pot and stir for approximately one minute to combine all ingredients.

Pour in three to four cups of water—just enough to cover all the ingredients—and season with salt to taste.

Cover the pot and allow the mixture to cook until the rice and dal are tender and the water has been fully absorbed.
