Ingredients

1 cup Ragi / Finger Millet Flour

1 cup Water

to taste Salt

as needed Clarified Butter (Ghee)

Instructions

1

Bring 1 cup of water to a boil in a pan and add salt to taste.

2

Once the water is boiling, add 1 cup of Ragi flour (Finger Millet Flour). Mix it thoroughly with the water and immediately turn off the heat.

3

Transfer the mixture to a mixing bowl. Let it cool for about 2 minutes until it is cool enough to handle, then knead the mixture into a soft, smooth dough.

4

Divide the prepared dough into smaller portions and roll them into balls.

5

Dust your rolling surface with a little dry flour (wheat or Ragi flour can be used) and use a rolling pin to flatten each dough ball into a round chapati.

6

Heat a pan on medium-high heat. Place the rolled roti on the pan and lightly press it using a damp napkin or cloth to prevent cracks and help it cook evenly.

7

Flip the roti to the other side. Continue cooking until the roti puffs up nicely. Ensure both sides are cooked thoroughly (approximately 3-4 minutes).

8

After cooking on the pan, you can also place the roti directly over an open gas flame to help it puff up further.

9

Once cooked, remove the roti from the heat and apply a light coating of ghee on top for flavor.
