Ingredients

1 cup Green Gram Dal (Moong Dal)

5 cups Water

1 cup Carrot (chopped)

2 cups Cauliflower

1 tsp Turmeric Powder

1 tsp Salt

3 tbsp Clarified Butter (Ghee)

2 tsp Cumin Seeds

1 tsp Fennel Seeds

1 tbsp Green Chilli (chopped)

1 tbsp Ginger (chopped)

as needed Coriander Leaves (chopped)

to taste Lemon Juice

to taste Black Pepper

Instructions

Step 1Preparation & Cooking the Dal

Wash 1 cup of moong dal and let it soak in water for about 1 hour.

Bring 4 cups of water to a boil in a pan on medium heat and add the soaked dal.

Let the dal cook for about 10 minutes. Collect and discard any foam that forms on the surface.

Add 1 cup of chopped carrots to the dal and continue cooking.

Once the dal is almost cooked (it should break down easily when pressed), add 2 cups of chopped cauliflower and an additional 1 1/2 cups of water. Let it cook for another 10 minutes.

Add 1/2 teaspoon of turmeric powder and 1 teaspoon of salt. Let the mixture boil for 5 minutes, then turn off the heat.

Step 2Preparing the Tempering (Seasoning)

In a small saucepan over medium heat, melt 3 tablespoons of ghee.

Add 2 teaspoons of cumin seeds and wait for them to sizzle.

Add 1 teaspoon of fennel seeds, followed by chopped green chili and fresh ginger to taste. Sauté for about a minute until fragrant.

Pour the prepared tempering over the cooked dal.

Add fresh coriander (cilantro) leaves and lemon juice to taste. Stir and serve hot with rice or roti.
