Ingredients

For the Ragda (Peas Curry):

3 cup Dried White Peas

1 cup Onion (chopped)

1 cup Tomato (chopped)

2 tsp Oil

1 tsp Cumin Seeds

1 tsp Red Chilli Flakes

Green Chilli

to taste Salt

1 tsp Red Chilli Powder

1 tsp Turmeric Powder

1 tsp Coriander Powder

1 tsp Cumin Powder

1 tsp Garam masala Powder (Hot Spices)

3 tbsp Tamarind Pulp

as needed Coriander Leaves (chopped)

For the Tikki (Potato Patties):

6 piece Potato (boiled & mashed)

A handful Coriander Leaves (chopped)

to taste Salt

1 tsp Black Salt

1 tsp Red Chilli Powder

1 tsp Coriander Powder

1 tsp Cumin Powder

1 tsp Chili Flakes

1 tsp Chaat Masala

1 tsp Garam masala Powder (Hot Spices)

Oil

For the Assembly/Chaat:

Hot ragda/gugni

Yogurt

Sliced onions

Coriander

Roasted crushed peanuts

Tamarind chutney

Spices: Chaat Masala, black salt, red chili powder, salt, and cumin powder.

Instructions

Step 1Prepare the Ragda (Peas Curry)

Soak dried white peas overnight, then pressure cook them with salt for 5 whistles and 10 minutes on simmer.

In a heated pan with oil, stir in cumin, chili flakes, and green chili. Add onions and cook until light brown.

Add tomatoes and salt, cooking until mushy. Mix in red chili powder, turmeric, coriander powder, and cumin powder.

Add the boiled peas, water, and tamarind pulp. Simmer for 5-10 minutes. Finish with garam masala.

Step 2Make the Aloo Tikki (Potato Patties)

Combine boiled/mashed potatoes, coriander, salt, black salt, red chili powder, coriander powder, cumin powder, chili flakes, chaat masala, and garam masala.

Form portions into round patties between your palms and press lightly.

In a skillet with hot oil, shallow fry the patties on medium-to-high flame until both sides are golden brown.

Step 3Assemble the Chaat

Place the crispy tikkis on a plate and top with hot ragda.

Drizzle with yogurt, tamarind chutney, and top with sliced onions, roasted crushed peanuts, coriander, and sev for a perfect texture. Sprinkle remaining spices (chat masala, red chili powder, cumin powder) to taste.
