Ingredients

1 cup Penne Pasta

4 no. Kashmiri Red Chilli

1 medium Onion (finely chopped)

4 small Tomato

1 tbsp Garlic (finely chopped)

1 tsp Black Pepper (roughly crushed)

Mixed Herbs : ½ tsp (Oregano, basil, rosemary, and thyme)

1 tbsp Tomato Ketchup

20 g Processed Cheese

few Mozzarella Cheese

2 tbsp Oil

to taste Salt

Instructions

Step 1Boil Tomatoes and Chillies

Boil the tomatoes and Kashmiri red chilies in water for about 10 minutes until the tomato skins begin to peel off.

Remove from heat and let them cool completely.

Step 2Prepare the Pasta

While the tomatoes cool, boil a pot of water. Add salt and a drizzle of cooking oil.

Cook the pasta until it is done (tender but not mushy), then drain it and rinse with cold water to prevent sticking. Set aside.

Step 3Prepare the Tomato Puree

Once the boiled tomatoes and chilies have cooled, peel off the tomato skins and remove the "eye" portion.

Place them in a blender and grind into a smooth, vibrant red paste.

Step 4Sauté Aromatics

Heat cooking oil in a pan. Add the finely chopped garlic and sauté until golden.

Add the finely chopped onions and continue to sauté until they turn golden brown.

Step 5Prepare the Sauce

Pour the tomato puree into the pan with the onions and garlic.

Add a little water to the blender jar to rinse out the remaining puree and add it to the pan.

If you aren't using whole Kashmiri chilies, stir in the red chili powder now. Add the mixed herbs (oregano, basil, rosemary, and thyme), crushed black pepper, and tomato ketchup.

Mix well, cover, and cook for 2 to 3 minutes, then add salt to taste.

Step 6Combine and Serve

Add the boiled pasta to the sauce and mix thoroughly.

Cook for one final minute. To serve, plate the hot pasta and top with pieces of mozzarella cheese (the heat will melt it).

Optionally, grate some processed or parmesan cheese over the top and garnish with fresh coriander.
