Ingredients

Main Ingredients :

2 tsp Salt

4 tbsp Fennel Seeds

1 tsp Fenugreek Seeds

1 tsp Cumin Seeds

1 tsp Carom Seeds (Ajwain)

250 g Bitter Gourd

3 tbsp Yellow Mustard Seeds

1 pinch Asafoetida Powder (Hing)

15 piece Black Pepper

3 cup Mustard Oil

1 tsp Turmeric Powder

1 tbsp Kashmiri Red Chilli Powder

1 tsp Black Salt

2 piece Lemon Juice

2 tbsp Vinegar

2 tbsp Black Cumin Seeds

Instructions

Wash and dry the bitter gourds properly.

Trim both ends and cut them into ½ cm round slices.

Add salt and mix well. Cover and keep aside for 1 hour.

Drain the bitter gourd in a strainer for 5 minutes

Spread the slices on a cloth and dry them in sunlight for 1 hour or under a fan for 2 hours.

Dry roast fennel seeds, fenugreek seeds, cumin seeds, and carom seeds for 2 minutes

Add yellow mustard seeds, hing, and black pepper. Roast for 1 minute and let cool.

Coarsely grind the roasted spices.

Heat mustard oil until smoky and let it cool slightly.

Add turmeric powder to the oil and mix.

Add bitter gourd slices and coat well.

Add ground spices, Kashmiri red chilli powder, salt, black salt, and kalonji. Mix thoroughly.

Transfer to a container and add lemon juice and vinegar.

Mix well and keep the pickle for 3 days

On the fourth day, stir the pickle and add extra mustard oil if needed.

Serve with meals and enjoy.
