Made with simple, fresh ingredients like bottle gourd, cabbage, tomato, celery, and ginger, this soothing soup is easy to prepare at home. Simply pressure cook the vegetables, blend into a smooth, comforting puree, and season with cumin, black pepper, and a touch of ghee for a delicious, fiber-rich meal that keeps you feeling refreshed and cozy.

200 g of bottal gourd(peeled &chopped)
100 g Cabbage (chopped)
1 medium Tomato (chopped)
1 inch piece of ginger (peeled &chopped )
1 big stalk of celery (chopped)
A few of coriander stalk (chopped)
1 tsp Clarified Butter (Ghee)
to taste Salt
2 cups Water
For garnishing Coriander Leaves (chopped)
For garnishing Red Chilli Powder
A pinch of cumin black pepper
To test of crushed black pepper
Step 1— prepare the vegetable

Thoroughly wash the bottle gourd, cabbage, tomato, ginger, celery stalk, and coriander stalks.

Peel the bottle gourd and chop it into large, uniform chunks.

Chop the cabbage, tomato, and ginger into smaller pieces.

Roughly chop the celery stalk and the coriander stalks.
Step 2— cook the vegetable

Place all the chopped vegetables into a pressure cooker.

Add two cups of water to the cooker.

Secure the lid and pressure cook the mixture for to 4 whistles.

If you do not have a pressure cooker, you can alternatively boil the vegetables in a pot of water for 15 to 20 minutes until soft.

Once cooked, allow the pressure cooker to cool down completely before opening the lid.
Step 3— blend and strain

Transfer the cooked vegetables into a blender. It is best to avoid adding all the hot liquid at once to prevent splashing.

Blend the mixture until you achieve a smooth puree.

Pass the puree through a strainer to remove any remaining tomato seeds or vegetable skins.

If necessary, add the reserved cooking water back into the strained pulp and blend again briefly to extract maximum flavor.
Step 4— season and finalized

Pour the strained soup mixture into a pot and place it back on the heat.

Bring the soup to a gentle boil.

Season with salt to taste and a generous pinch of cumin seed powder.

Stir in half a teaspoon of ghee (or butter) and continue mixing until it has melted completely.

Turn off the heat and serve the soup warm in a bowl. You may garnish with fresh coriander leaves or a sprinkle of red chilli powder if desired.
