Ingredients

Extra virgin olive oil : 3 tablespoons

1 no. Shallots (thinly sliced)

8 cloves Garlic (chopped)

1 tbsp All-Purpose Flour (Maida)

1 cup Dry White Wine

1 tsp Oregano

1 tsp Parsley

1 tsp Dry Thyme

to taste Sea Salt

to taste Black Pepper (roughly crushed)

1 no. Lemon

Vegetable broth : 3 1/2 cups

Pasta : 8 oz

to taste Grated Cheese

For garnishing Basil Leaves (chopped)

Instructions

Thinly slice the shallot and roughly chop the garlic cloves.

Heat a large fry pan over medium heat and add the extra virgin olive oil.

Once hot, add the sliced shallot and chopped garlic, stirring continuously for 2 to 3 minutes until the shallot is translucent and the garlic is fragrant.

Add the all-purpose flour to the pan and continue to stir for 1 to 2 minutes to cook off the raw flour taste.

Pour in the dry white wine and stir. Add the dried oregano, dried parsley, dried thyme, sea salt, freshly cracked black pepper, and a kiss of fresh lemon zest (avoiding the bitter white pith).

Let the mixture simmer for about 3 minutes to allow the alcohol to cook off.

Pour in the vegetable broth and turn the heat to high. Once the mixture comes to a boil, add the pasta.

Mix periodically every 2 to 3 minutes to prevent the pasta from sticking.

After 8 to 9 minutes, place a lid on the pan, reduce the heat to low-medium, and continue to simmer for another 3 to 4 minutes until the pasta is perfectly al dente.

Remove the pan from the heat. Top with freshly grated cheese and chopped fresh basil, then serve directly out of the pan.
