This recipe combines tender yellow corn, crunchy baby corn, and earthy mushrooms with aromatic spices like garam masala, cumin, and coriander. The rice is infused with whole spices, layered with a flavorful vegetable mix, and baked to perfection. Topped with ghee and fried onions, this aromatic dish is an elegant twist on a classic comfort food. Perfectly satisfying for any lunch or dinner occasion!

For the Vegetable Base:
1 tbsp Oil
1 piece Onion (chopped)
1 tbsp Ginger Paste
1 tbsp Garlic Paste
as needed Boiled Yellow Corn
6 piece Baby Corn (sliced)
12 piece Mushrooms
1 cup Tomatoes (puréed)
1 tsp Coriander Powder
1 tsp Cumin Seeds
1 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Garam masala Powder (Hot Spices)
3 tbsp Cream (Malai)
as needed Coriander Leaves (chopped)
to taste Salt
For the Rice:
1 cup Boiled Rice
2 piece Cloves
1 piece Cinnamon Stick
2 piece Cardamom Seeds
1 piece Bay Leaf
2 piece Peppercorns
to taste Salt
For Layering/Garnish:
2 tbsp Clarified Butter (Ghee)
as needed Fried Onions (Birista)
Step 1— Prepare the Vegetable Base

In a pan, heat the oil over medium heat.

Add the onions and sauté until they become caramelized.

Stir in the ginger and garlic paste.

Once aromatic, add the boiled yellow corn, sliced baby corn, and mushrooms.

Pour in the tomato puree and add the chopped coriander.

Season with coriander and cumin seed powder, red chilli powder, turmeric, garam masala, and salt.

Mix well and let the vegetables cook for about five minutes.

Once the moisture from the tomato puree has evaporated, stir in the cream and turn off the flame.
Step 2— Prepare the Rice

Boil the rice in water seasoned with cloves, cinnamon, cardamom, bay leaf, peppercorns, and salt.

Once cooked, drain the excess water and let the rice cool completely.
Step 3— Layer and Bake

In a baking dish, spread a layer of the cooked vegetable mixture.

Follow with a layer of the prepared boiled rice.

Drizzle a little ghee over the top and garnish with fried onions.

Cover the dish securely with aluminum foil.

Place it in a preheated oven at 180°C and bake for 10 minutes.
