Ingredients

1 cup Basmati Rice

1 tbsp Clarified Butter (Ghee)

1 tbsp Oil

as needed Garam masala Powder (Hot Spices)

2 medium Onion (thinly sliced)

2 large Green Chilli

1 tsp Ginger-Garlic Paste

4 medium Tomato (chopped)

1 tsp Turmeric Powder

1 tsp Salt

3 tsp Red Chilli Powder

1 tsp Garam masala Powder (Hot Spices)

handful Coriander Leaves (chopped)

1 cups Water

Wash 1 cup of whole grain basmati rice a few times until clean. Soak the rice in enough water and let it sit for about 30 minutes.

Add 2 thinly sliced medium-sized onions to the cooker. Sauté until the onions turn transparent. Add 2 large green chillies (cut into pieces) and 1 teaspoon of ginger-garlic paste. Stir well.

Add 4 chopped medium-sized tomatoes. Once they soften, mix in the spice powders: 1/4 teaspoon turmeric powder, 1 teaspoon salt, 3 teaspoons red chili powder, and 1 teaspoon garam masala powder.

Add the soaked rice to the tomato mixture and stir gently. Add a handful of fresh coriander leaves, followed by 1 1/2 cups of water. Gently mix everything together.

Secure the pressure cooker lid and cook for one whistle on medium flame. Once done, let the pressure release, and your fragrant tomato rice is ready to serve.
