Ingredients

500 g Radishes (chopped)

1 cup Mustard Oil

2 tbsp Salt

1 tsp Red Chilli Powder

1 tsp Turmeric Powder

2 tbsp Fennel Seeds

1 pinch Asafoetida Powder (Hing)

2 tbsp Lemon Juice

Instructions

Wash and peel the radish properly.

Cut the radish into long sticks or medium-sized pieces.

Spread the radish pieces on a cloth and let them dry for 1–2 hours.

Heat mustard oil until slightly smoky and let it cool a little.

In a large bowl, add radish, salt, turmeric powder, red chilli powder, mustard seeds, fennel seeds, fenugreek seeds, and hing.

Pour mustard oil and lemon juice over the radish.

Mix everything thoroughly until the radish pieces are well coated with spices.

Transfer the pickle to a clean and dry airtight container.

Keep the pickle for 2 days so the spices absorb properly.

Serve with paratha, dal-rice, or regular meals.
