Ingredients

Main Ingredients:

150 g Sweet Potato Glass Noodles

Vegetable mix : 150g total, including onion, red pepper, carrot, mushrooms, and earwood mushrooms

handful Spinach Leaves

Aromatics & Seasonings:

1 tbsp Garlic

3 tbsp Soy Sauce

1 tbsp Sugar

1 tbsp Corn Syrup

to taste Black Pepper

1 tbsp Sesame Seeds

Cooking oil : A splash for stir-frying

Instructions

Bring a quart of water to a boil in a pan. Add the sweet potato glass noodles and boil for 6 minutes.

Once finished, drain the noodles and give them a quick rinse to remove excess starch.

Julienne your choice of vegetables (such as onion, red pepper, carrot, and mushrooms) into long, thin strips to make them easier to grab with chopsticks.

Measure out 150g of prepared vegetables.

Heat a splash of oil in a pan over high heat.

Add half a tablespoon of garlic, stirring until browned.

Add a small splash of soy sauce to ensure the meat is well-seasoned.

Add the prepared vegetables to the pan with the beef and sauté for about one minute. Add the cooked noodles to the pan.

Add the following seasonings to the pan : 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of sugar, 1 tablespoon of corn syrup, a dash of black pepper, and half a tablespoon of sesame seeds.

Add the spinach last and stir-fry until just wilted. Mix everything thoroughly to combine the flavors.

Serve immediately and finish with an extra sprinkle of sesame seeds if desired.
