Ingredients

1 1/2 lb of cherry tomatoes

5 cloves Garlic (minced)

3 medium Shallots (thinly sliced)

1 tsp Red Chilli Flakes

1 springs Fresh Rosemary

2 springs Fresh Thyme

1 tbsp Unsalted Butter

1 lb of penne pasta

10 leaves Basil Leaves

2 tbsp Olive oil

1 tsp Kosher salt

few Burrata cheese

Instructions

Preheat your oven to 375°F. On a large baking sheet, arrange the washed and dried cherry tomatoes.

Add the smashed garlic cloves, halved shallots, chili pepper (or red pepper flakes), rosemary sprig, and thyme sprigs to the baking sheet.

Drizzle everything generously with olive oil and sprinkle with kosher salt to coat the ingredients evenly.

Place the baking sheet in the oven and roast for 20–25 minutes, or until the tomatoes have burst and the shallots are softened and browned.

While the vegetables are roasting, cook the penne pasta in a stockpot until al dente.

Crucially, reserve 3/4 cup of the starchy pasta water before draining the noodles.

Once roasted, remove the baking sheet from the oven.

Discard the rosemary and thyme sprigs. Transfer the roasted tomatoes, garlic, shallots, and all the pan juices into the stockpot used for the pasta.

Add the butter and a portion of the reserved pasta water.

Using an immersion blender (or a canister blender, ensuring steam can escape), purée the mixture into a smooth sauce.

Add more of the reserved pasta water as needed to reach your desired consistency.

Return the sauce to low heat and add the cooked pasta to the pot.

Stir to coat the noodles and warm everything through for 2–3 minutes.

Pour the pasta into a serving bowl. Place the ball of burrata in the center and tear the fresh basil leaves over the top.
