Ingredients

1 lb Grated Carrot

4 cups Cooked Rice

30 g Ginger (grated)

1 large Onion (finely chopped)

3 cloves Garlic (finely chopped)

1 tsp White Pepper

beef base (1 tsp)

3 tbsp Oil

to taste Salt

Instructions

1

Finely chop the onion and garlic, and grate the ginger into small pieces.

2

Use a grater to shred the carrots into very thin, julienne-like pieces. This texture helps the carrots soften quickly and release their natural pigments.

3

Heat about three tablespoons of oil in a pan over medium heat. Add the chopped garlic, onion, and grated ginger. Sauté for about two minutes until they become fragrant and lightly caramelized.

4

Stir in the white pepper and the beef base (such as Better Than Bouillon). Mix well until the base is dissolved.

5

Add the grated carrots to the pan. Stir-fry them for two to three minutes until they soften and begin to release their juices, which will provide the rice with a beautiful orange color.

6

Add the precooked and chilled rice to the pan. Stir everything together thoroughly, just like you would with fried rice, ensuring the rice is evenly coated with the carrot mixture and seasonings.

7

Once everything is well combined and heated through, taste and add salt if needed. Serve warm.
