as needed Oil

Instructions

Step 1Prepare the Dough

1

In a mixing bowl, combine the besan (gram flour), salt, turmeric powder, and the optional pinch of baking powder.

2

Add the crushed ajwain (carom seeds) and 2 teaspoons of oil. Mix well until the mixture resembles coarse crumbs.

3

Add another 2 teaspoons of oil and mix again.

4

Gradually add water while mixing until the dough reaches the right consistency, then knead for 2 to 3 minutes until it holds its shape.

5

Rub half a teaspoon of oil over the finished dough and let it rest for a few minutes.

Step 2Shape the Fafda

1

Divide the rested dough into equal-sized portions and shape them into small, thin bullets.

2

Grease your palms with a drop of oil to prevent sticking.

3

Place a dough bullet on a rolling surface and use a rolling pin to roll it out into a thin, long strip.

4

Gently lift the strip off the surface using a knife.

Step 3Fry and Serve

1

Heat enough oil in a pan for deep frying.

2

Once the oil is hot, carefully drop the prepared Fafda strips into the oil.

3

Maintain a medium-low flame and fry them on both sides for 1 to 2 minutes until they are crispy and golden.

4

Remove the Fafda from the oil.

5

Optionally, fry a few whole green chilies in the same oil until their skin changes color.

6

Garnish the Fafda with the fried green chilies and serve.
