Ingredients

3 cups Rice

Urad Dal (Split Black Gram,1 cup)

to taste Salt

as needed Water

Instructions

1

Thoroughly wash the urad dal and idli rice separately, ensuring all impurities are removed. Soak both in water for 3 to 4 hours.

2

Drain the water from the rice, but keep the water used for soaking the urad dal. In a mixer, grind the urad dal into a smooth paste, adding the reserved dal soaking water as needed.

3

Transfer the dal paste to a large mixing bowl. Add the soaked rice to the mixer and grind until it reaches a smooth, consistent texture.

4

Combine the rice and dal pastes in the large bowl. Add salt to taste. Mix the batter thoroughly by hand for about 10 minutes; this step is crucial for incorporating air, which helps the idlis turn out soft and fluffy.

5

Cover the batter and allow it to ferment overnight. The batter is ready when it has thickened and become light and airy.

6

Grease your idli molds with a little oil or butter. Pour the fermented batter into each mold.

7

Steam the idlis on a medium flame for 10 minutes until they are cooked through.

8

Carefully remove the idlis from the molds and serve hot with your favorite chutney.
