1 tbsp Black Gram (Urad Dal)

1 piece Green Chilli (slit)

1 tsp Red Chilli Powder

1 tsp Sugar

to taste Salt

as needed Coriander Leaves (chopped)

Instructions

1

Crumble the idlis using a fork or by pulsing them in a mixer. Avoid over-mashing to keep a fluffy texture.

2

In a bowl, toss the crumbled idlis with turmeric, red chilli powder, salt, and sugar until well combined.

3

Heat ghee in a pan. Add mustard seeds, cumin seeds, chana dal, and urad dal. Sauté until the dals turn golden brown.

4

Add curry leaves, green chilli, roasted peanuts, and coriander leaves. Sauté until the peanuts are lightly toasted.

5

Add the chopped onions and cook until they soften. Add a pinch of salt to season the onions.

6

Incorporate the seasoned crumbled idlis into the pan and toss everything together.

7

Add a small splash of water to help the spices distribute evenly and to heat the mixture through thoroughly.

8

Serve hot as a quick breakfast or snack.
