Ingredients

150 g Ginger (chopped)

4 small Tamarind

1 tbsp Jaggery (Powdered)

2 tbsp Coriander Seeds

2 tsp Bengal Gram (Chana Dal)

1 tsp Cumin Seeds

1 tsp Fenugreek Seeds

1 tsp Mustard Seeds

6 Guntur red chilies (for heat)

6 Byadgi chilies (for color)

Oil (Sesame oil recommended for tempering)

1 tsp Mustard Seeds

1 tsp Cumin Seeds

2 nos. Red Chilli

A pinch Asafoetida

A few Curry Leaves

to taste Salt

Instructions

Heat a pan with a little oil. Use sesame oil for an authentic flavor.

Add coriander seeds, chana dal, cumin seeds, fenugreek seeds, mustard seeds, and tamarind pieces.

Roast on low flame for 2–3 minutes until aromatic.

Add Guntur red chilies (for heat) and Byadgi chilies (for color) and roast until crisp.

Transfer to a plate to cool completely.

In the same pan, add more oil and the peeled, chopped ginger.

Sauté on medium flame for 5 minutes until the raw smell fades and it turns slightly golden.

Turn off the heat and let it cool completely.

In a mixer jar, grind the roasted spices and chilies into a coarse powder first.

Add the sautéed ginger to the jar and grind again without water.

Finally, add salt and a little water, and grind into a smooth paste.

Heat 4 tbsp of oil in a pan.

Add mustard seeds and cumin seeds, letting them splutter.

Add red chilies, asafoetida (hing), and curry leaves.

Add the ground ginger paste to the tempering and mix well. Let it simmer for a few minutes.

Finally, add jaggery and mix well to balance the flavors.
