Ingredients

10 piece Egg

2 medium Onion (roughly chopped)

4 small Green Chilli (chopped)

1 tsp Turmeric Powder

1 tsp Pepper Powder

1 tsp Salt

2 tbsp Chili Flakes

handful Fresh Coriander

6 slice Brown Bread

3 tbsp Butter

Instructions

Step 1Prepare the Egg Mixture

Crack 10 eggs into a large bowl and whisk them lightly.

Add 2 finely chopped medium-sized onions, 4 finely chopped small green chilies, 1/2 teaspoon of turmeric powder, 1 teaspoon of pepper powder, 1 teaspoon of salt, and 2 tablespoons of fine chili flakes.

Mix in a handful of finely chopped fresh coriander leaves and stir everything well.

Step 2Assemble and Cook

Heat a tawa (griddle) over medium heat and melt a small cube of butter.

Take a slice of bread and dip it into the egg mixture, ensuring it is completely covered on one side. Alternatively, place the bread on the tawa and pour some mixture over it.

Place the coated bread on the hot tawa.

Add a little more of the egg mixture to the top side of the bread and spread it evenly.

Gently press the bread slice with a spatula while it cooks.

Once the bottom is cooked, add a little more butter to the pan, flip the bread, and cook for about 1 minute until both sides are golden brown.

Step 3Serve

Remove from the tawa and serve immediately while hot, ideally with ketchup or mint chutney.
