Ingredients

1 cup Wheat Flour

1 cup All-Purpose Flour (Maida)

1 tsp Salt

2 tsp Powdered Sugar

1 cup Curd

2 tbsp Oil

1 tsp Baking Soda

1 tsp Baking Powder,

as needed Water

Fresh Grated Cottage Cheese (Paneer)

as needed Processed Cheese

1 Onion (chopped)

2 Green Chilli (chopped)

1 tsp Ginger (chopped)

handful Dry Fenugreek Leaves (Methi)

1 tsp Red Chilli Powder

handful Coriander Leaves (chopped)

1 tsp Coriander Powder

1 tsp Dry Mango Powder

1 tsp Cumin Powder

1 tsp Garam masala Powder (Hot Spices)

1 tsp Black Pepper Powder

as needed Butter

1 tbsp Sesame Seeds

Combine the wheat flour, all-purpose flour, salt, sugar, baking powder, baking soda, curd, and oil. Knead into a soft, smooth dough using water. Cover and let it rest for 30 minutes.

In a bowl, mix grated potatoes, cottage cheese, onions, green chilis, ginger, and all spices. Add fresh coriander and mix well to form the stuffing.

Divide the dough into small balls. Flatten each ball slightly and place a portion of the stuffing in the center.

Gather the edges of the dough to seal the stuffing inside, then gently roll it out into an oval or round shape.

Sprinkle some water on one side of the rolled kulcha and press sesame seeds and kalonji onto the damp surface.

Heat a tawa. Place the kulcha on it (water-side down). Cook until bubbles form, then flip the tawa to cook the top directly over the flame for an authentic char.

Once browned, remove from heat, brush generously with butter, and serve hot.
