Ingredients

1 cup Pearl Millet (Bajra Flour)

1 cup Water

as needed Pink Himalayan Salt

Desi ghee : To serve

Instructions

Step 1Prepare the Dough Base

In a saucepan, add one cup of water and a pinch of pink Himalayan salt.

Bring the water to a boil, then reduce the heat to the lowest setting.

Add one cup of bajra flour to the boiling water.

Let the mixture sit undisturbed for about one and a half to two minutes.

Turn off the heat and thoroughly mix the flour and water using the back of a wooden spoon.

Allow the mixture to cool down for approximately ten minutes.

Step 2Knead the Dough

Transfer the cooled mixture to a plate.

Knead the mixture well until it forms a soft, smooth dough.

Once smooth, divide the dough into equal-sized balls and set them aside.

Step 3Roll the Rotis

Take a dough ball and coat it lightly with dry bajra flour.

Gently flatten the ball with your fingers before rolling it out with a rolling pin. This technique helps prevent the edges from cracking since bajra is gluten-free.

Step 4Cook the Rotis

Heat a cast-iron tawa (griddle).

Place the rolled-out roti on the hot tawa and keep the flame on low.

Wait for small bubbles to form on the surface of the roti, then flip it over.
