Instructions

Step 1— Preparing the Bean Filling

1

Heat olive oil in a pan over medium heat.

2

Add the sliced onions, red bell pepper, and finely diced garlic. Sauté for 5 to 6 minutes.

3

Stir in the drained and rinsed black beans.

4

Squash a portion of the beans with your hands or a utensil to create a creamier texture.

5

Season with cumin, salt, and pepper. Stir well.

6

Let the mixture simmer for another 5 minutes. If it becomes too dry, add a few tablespoons of water to reach your desired consistency.

Step 2— Making the Mango Pico de Gallo

1

In a large bowl, mash the avocado with a fork.

2

Add the finely diced tomatoes and small onion.

3

Cube the mango and fold it into the mixture.

4

Squeeze half a lime over the bowl and add salt to taste.

5

Stir in a few sprigs of fresh parsley to finish.

Step 3— Assembly

1

If using wraps, place them in a preheated oven on the grill rack with the bottom side facing up to crisp them into a taco shape for about 5 minutes.

2

Add the bean filling into the warm taco shells.

3

Top with a generous serving of the mango pico de gallo.

4

Garnish with a dollop of sour cream (or soy-based alternative), fresh jalapeños, additional parsley, and a final squeeze of lime.
