Ingredients

2 stalks of celery

1 large Carrot (thinly sliced)

1 no. Onion (sliced)

2 tbsp Olive oil

6 cups Cabbage (chopped)

2 cloves Garlic (minced)

1 tsp Oregano

1 tsp Basil Leaves

1 tsp Salt

4 cups of vegetable broth

1 cup Parsley

1 tbsp Lemon Juice

to taste Black Pepper (roughly crushed)

one 14-ounce can of diced tomatoes

Instructions

Step 1Prepare the Mirepoix

Slice and dice the celery stalks into bite-sized pieces.

Cut the carrot in half, then halve those pieces lengthwise before slicing and dicing them into uniform chunks.

Slice and dice the onion.

Set these vegetables aside in a bowl.

Step 2Prepare the Cabbage and Herbs

Slice your half-cabbage into quarters, remove the tough core, and chop it into pieces. You will need about 6–8 cups.

Finely chop the fresh parsley and set it aside in a small bowl.

Step 3Sauté the Aromatics

Heat the olive oil in a large pot over medium-high heat.

Add the diced onions, carrots, and celery. Sauté for 4–5 minutes until the vegetables begin to soften.

Stir in the minced garlic, dried oregano, dried basil, and salt. Cook for an additional minute, stirring constantly to release the fragrances.

Step 4Cook the Cabbage

Add the chopped cabbage to the pot. Let it "sweat" for about 5 minutes, stirring frequently to ensure the cabbage softens evenly.

Step 5Simmer the Soup
