Ingredients

1 cup Pearl Millet (Bajra Flour)

1 cup Water

Pink Himalayan Salt: As needed

1 tsp Turmeric Powder

1 tsp Kashmiri Red Chilli Powder

1 tsp Black Pepper Powder

1 tsp Dry Mango Powder

as needed Clarified Butter (Ghee)

Instructions

Bring the water to a boil in a pan and add salt to taste.

Reduce heat to low and stir in the bajra flour. Mix quickly for about a minute until a cohesive mass forms.

Transfer the dough to a flat surface. Add the turmeric, chili powder, black pepper, and amchur powder. Knead the dough while it is still warm to incorporate the spices into a soft dough.

Let the dough rest for about 5 minutes.

Take a lemon-sized portion of dough and knead it a few times to ensure it is smooth. Dust with bajra flour and roll it out into a thin, round roti.

Place the roti on a hot pan (tawa). Cook for 30-40 seconds, flip it, and cook for another 30-40 seconds. Flip again and cook until it puffs up.

Remove from heat and apply desi ghee as needed.
