Ingredients

200 g Wheat Flour

150 g Beetroot

1 piece Spring Onion - whites and greens (finely chopped)

to taste Green Chilli (finely chopped)

small Coriander Leaves (finely chopped)

1 tsp Ginger (finely chopped)

1 tsp Carom Seeds (Ajwain)

small White Sesame Seeds

1 tsp Oil

to taste Salt

Instructions

Step 1Prepare the Beetroot Base

Start by peeling and chopping approximately 150g of fresh beetroot into small pieces.

Blend the beetroot into a smooth, fine puree. If you have trouble blending, add a small splash of water to assist the process.

Step 2Mix the Dough Ingredients

In a large mixing bowl, add 200g of wheat flour.

Incorporate the aromatic ingredients: add one chopped spring onion, finely chopped green chillies (adjust for heat), a generous amount of fresh coriander, and a small knob of minced ginger.

Add the dry seasonings: 1 teaspoon of ajwain (crush it between your palms to release the aroma), some white sesame seeds, and salt to taste.

Pour in 1 tablespoon of oil and your prepared beetroot puree. Mix everything thoroughly to begin forming the dough.

Step 3Knead and Rest the Dough

Knead the mixture into a soft, firm dough. It should have the consistency of a standard paratha dough—not too soft, yet not too hard.

If the dough feels too dry, add a tiny amount of water at a time.

Crucial tip: Coat the finished dough with a little oil and let it rest for 10–15 minutes. This makes the dough pliable and easier to roll.

Step 4Shape and Roll

Divide the dough into small, uniform-sized balls.

Dust a rolling board with dry flour and flatten a dough ball using a rolling pin into a circular shape.

Unlike thin rotis, thepla is slightly thicker.

Step 5Final Touch and Shaping

Sprinkle additional white sesame seeds and fresh coriander leaves over the surface, then lightly roll again to press them firmly into the dough.

To achieve that professional, uniform look, use a ring cutter or a round bowl to trim the edges of the flattened dough into a perfect circle.

Step 6Cooking the Thepla

Heat a pan over medium heat.

Place the thepla on the hot pan. Cook one side until it starts to set.

Flip it, add about 1/2 teaspoon of oil, and cook for 5–7 minutes on medium heat. Flip occasionally until both sides are well-cooked and the beetroot color turns into a deep, dark shade of pink.

Step 7Serving Suggestion

Serve your "Barbie Thepla" or Pink Thepla hot. The chef recommends pairing it with a side of tadka dahi (tempered yogurt) for the best flavor experience.
