Ingredients

2 no. Potato (boiled, peeled & cubes)

1 tbsp Ginger (finely chopped)

1 no. Carrot (thinly sliced)

handful Spinach Leaves

as needed Corn (boiled)

1 tbsp Butter

1 tsp Vinegar

to taste Salt

to taste Pepper

to taste Oregano

Cornflour : Optional, to be mixed with water for thickening

as needed Water

Place the boiled, cubed potatoes into a mixer and grind them until they reach a smooth, creamy consistency.

In a saucepan, melt the butter over medium heat.

Once hot, add the finely chopped ginger and sauté for a few seconds until fragrant.

Pour the potato puree into the saucepan. Strain the mixture well while adding it to ensure there are no lumps.

Add water to the mixture to reach your desired soup consistency, as the potato base is quite thick.

Stir in salt and pepper to taste. Allow the soup to reach a complete boil.

Once boiling, stir in the chopped spinach leaves and the thinly sliced carrots.
