Ingredients

1 cup Rolled Oats

3 cup Gram Flour (besan)

1 cup Clarified Butter (Ghee)

1 cup Brown Sugar

1 tsp Salt

1 tsp Baking Soda

1 tsp Baking Powder

3 tbsp Chocolate chips

3 tbsp Raisins

3 tbsp Milk

Instructions

1

In a mixing bowl, combine the brown sugar and ghee.

2

Whisk them together thoroughly until the mixture becomes light and fluffy.

3

Using a sieve, add the gram flour (besan), baking powder, baking soda, and salt to the bowl. Sift these into the wet mixture to ensure there are no lumps.

4

Add the oats to the bowl and mix everything together well.

5

Mix in the dark chocolate chips and raisins. You can also add other nuts like almonds or cashews if desired.

6

Gradually add room-temperature milk, one tablespoon at a time, to the mixture.

7

Be careful not to add too much; you only need enough to help the ingredients bind together.

8

Take small portions of the dough and shape them into cookies.

9

Press them gently to your desired thickness—thinner for extra crunch, or slightly thicker for a softer texture.

10

Line a baking tray with parchment paper.

11

If you don't have parchment paper, grease the tray with ghee or butter and dust it with a little flour.

12

Arrange the cookies on the prepared tray and top them with a few extra chocolate chips.

13

Bake in an oven until golden and done. Alternatively, you can bake them on a gas stove using a preheated kadhai (pot) filled with salt and a rack.

14

Once baked, let the cookies rest on the tray for a couple of minutes to firm up.

15

Finally, transfer them to a wire rack to cool completely before serving.
