Ingredients

2 tsp Oil

to taste Garlic (finely chopped)

A small piece Ginger (finely chopped)

few Spring Onion - whites and greens (finely chopped)

1 cup Carrot (finely chopped)

1 cup Cabbage (chopped)

1 cup Green Beans (finely chopped)

1 cup Green Capsicum (Finely Chopped)

1 tsp Salt

1 tsp Pepper

1 l Water

to taste Lemon Juice

4 small Lemon

1 cup Coriander Leaves (chopped)

Instructions

Heat the oil in a deep pot over medium-low heat.

Add the finely chopped garlic and ginger. Sauté briefly without browning them.

Add the chopped spring onion (whites and greens), finely chopped carrots, grated cabbage, chopped beans, and chopped capsicum to the pot.

Sauté the vegetables for 2 to 3 minutes to maintain their crunch.

Add salt and pepper to the vegetable mixture and stir well.

Pour in 1 litre of water, cover the pot with a lid, and let the soup boil on medium flame for 15 minutes.

Reduce the heat to low. Squeeze in the juice of two lemons (or to taste).

Add the chopped coriander leaves, including the stems, and mix thoroughly.

Taste the soup and add extra salt, pepper, or lemon juice if needed.

Let it simmer for another 2 minutes, then turn off the heat and serve the soup hot.
