Ingredients

For the Batter:

1 cup Semolina(Rava)

1 cup Curd

Water: 1 cup (plus extra as needed to adjust consistency)

2 tbsp Ginger

2 tbsp Curry Leaves

2 tsp Green Chilli

to taste Salt

Oil: As required

For the Topping:

1 tbsp Big Onions

1 tbsp Tomato

1 tbsp Green Capsicum

pinch Salt

Oil: A dash

Instructions

1

In a mixing bowl, combine semolina (rava/suji) and curd. Add chopped ginger, curry leaves, green chilies, and salt to taste. Pour in water and mix well to form a thick batter.

2

Let the batter rest for 10–15 minutes. This allows the semolina to absorb the water and reach the correct consistency.

3

After resting, the batter will have thickened. Add a little extra water if needed to adjust it to a spreadable but thick consistency.

4

In a small bowl, mix chopped onions, tomatoes, coriander, and capsicum. Add a pinch of salt and a dash of oil to the mixture.

5

Heat a griddle or non-stick pan until hot. Lightly grease it with oil or butter.

6

Pour a ladleful of batter onto the hot pan. Spread it lightly, but keep it slightly thicker than a dosa.

7

Sprinkle the prepared vegetable topping over the wet batter and press lightly so the vegetables stick to the surface.

8

Drizzle a little oil around the edges. Cook until the base is golden brown and crispy, then flip carefully to cook the other side until done.

9

Once cooked through and golden, serve hot with your favorite chutney.
