1 cup Sorghum Flour (Jowar)
1 cup Water
to taste Salt
pinch Lemon Juice
1 tsp Clarified Butter (Ghee)
Step 1— prepare the dough
1
Begin by bringing one cup of water to a boil in a pan.
2
Add salt to the boiling water according to your taste.
3
Turn the flame to a low setting and add one cup
4
Mix the flour and water thoroughly using a wooden spoon.
5
Once combined, turn off the heat and allow the mixture to cool down slightly.
6
Knead the mixture well with your hands until it forms a soft, pliable dough. If necessary, you can add a little more water while kneading to reach the desired consistency. A pinch of lemon juice can also be added during this stage to help improve the texture.
Step 2— Pressing and Flattening
1
Take a portion of the dough and dust it with some extra Jowar flour.
2
Place the dough on a flat surface and use a rolling pin to carefully roll it out into a flat, circular roti.
3
Place it on a flat surface or use a chapati press lined with plastic to flatten the dough into a round shape.
4
If doing it by hand, gently flatten it into a circular disc.
5
Take the kneaded dough and form it into a small, smooth ball
6
Dip the ball into some dry Jowar flour
Step 3— cooking on the tawa
1
After cooking, remove the roti from the heat and optionally apply a teaspoon of desi ghee before serving.
2
Heat a non-stick pan or tawa until it is hot.
3
Carefully place the shaped roti onto the hot tawa
4
Gently press the roti with a cloth to ensure even cooking and to help the steam cook the flour thoroughly.
5
Once the roti is cooked through and water has evaporated, carefully flip it over if needed.
