Ingredients

1 cup Wheat Flour

1 cup Chickpea Flour (Besan)

1 medium Onion (finely chopped)

2 nos. Green Chilli (finely chopped)

A small handful Mint Leaves

A small handful Coriander Leaves (chopped)

1 tsp Carom Seeds (Ajwain)

1 tsp Coriander Powder

1 tsp Cumin Powder

1 tsp Red Chilli Flakes

1 tsp Dry Mango Powder

1 tsp of Garam masala powder

1 tsp Salt

1 tsp Dry Fenugreek Leaves (Methi)

2 tsp Oil

Step 1Prepare the Dough

In a large mixing bowl, combine the wheat flour (atta) and chickpea flour (besan).

Add the chopped onion, green chilies, fresh mint leaves, and fresh coriander leaves.

Add the dry spices: carom seeds (ajwain), coarsely ground coriander powder, coarsely ground cumin powder, red chili flakes, dry mango powder (amchur), garam masala powder, salt, and dried fenugreek leaves (kasuri methi).

Mix all the dry ingredients and herbs thoroughly.

Drizzle in the oil and mix again.

Gradually pour in water while kneading to form a soft dough. Be careful not to add too much water at once.

Let the dough rest for about 10 minutes to ensure it is soft and pliable.

Step 2Shape the Rotis

Divide the rested dough into equal-sized balls.

Take one dough ball, coat it thoroughly in dry flour, and place it on a rolling surface dusted with flour.

Roll the dough ball out into a circular shape. You can use a lid or a circular cutter to trim the edges for a perfect shape, or leave them rustic.

Step 3Cook the Rotis

Heat a tawa (flat griddle) until it is hot.

Place the rolled roti onto the tawa and cook on medium-high heat.

Once you see small bubbles or black spots forming on the surface, flip the roti.

Drizzle a little oil or ghee on the cooked side and gently press the edges with a spatula to ensure even cooking.

Continue cooking until both sides are well-cooked and develop nice charred spots.
