Use freshly grated carrots for the best taste and softness. Carrots release water, so add water carefully while kneading. Add fresh fenugreek leaves (methi) for extra flavor. Store in an airtight container to keep the theplas soft. Apply ghee after cooking for extra softness and taste

Ingredients

2 cup Whole Wheat Flour

1 cup Carrot (shredded)

2 tbsp Curd

1 piece Green Chilli (chopped)

1 tbsp Ginger Paste

2 tbsp Coriander Leaves (chopped)

Seasoning:

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Cumin Powder

1 tsp Coriander Powder

1 tsp Carom Seeds (Ajwain)

1 tsp Sesame Seeds

to taste Salt

1 tbsp Oil

as needed Water

Instructions

In a large mixing bowl, add whole wheat flour, grated carrot, green chili, ginger paste, coriander leaves, yogurt, turmeric powder, red chili powder, cumin powder, coriander powder, carom seeds, sesame seeds, salt, and oil.

Mix all the ingredients well and knead into a soft dough by adding water gradually as needed.

Cover the dough and let it rest for 10 minutes.

Divide the dough into equal portions and roll each portion into a smooth ball.

Dust with flour and roll each ball into a thin round or oval-shaped thepla

Heat a tawa or flat pan on medium flame.

Place the rolled thepla on the hot tawa and cook for 30–40 seconds.

Flip the thepla, apply a little oil or ghee, and cook the other side.

Flip again and cook until golden brown spots appear on both sides.

Repeat with the remaining dough.

Serve hot with pickle, yogurt, chutney, or tea.
