Ingredients

For the Spicy Garlic Chutney:

Red Chilies: 20 (soaked in water for 1 hour)

12 clove Garlic

15 piece Small Onions

1 tsp Salt

4 bits Tamarind

as needed Water

3 tsp Oil (tempering)

1 tsp Mustard Seeds

1 tsp Cumin Seeds

For the Egg Dosa:

Dosa Batter: Enough to spread over the tawa

Eggs: 1 egg per dosa

to taste Salt

to taste Pepper Powder

1 small Onion (roughly chopped)

handful Fresh Coriander

Ghee or Oil: As needed

Instructions

Step 1Make the Spicy Garlic Chutney

Soak about 20 red chilies in water for 1 hour.

In a mixer jar, combine the soaked red chilies, 12 garlic cloves, 15 small onions (shallots), 1 teaspoon of salt, and 4-5 tamarind bits.

Add the chili soaking water to the jar and grind into a smooth paste.

Temper the chutney: Heat 3 teaspoons of oil in a pan. Add 1/2 teaspoon each of mustard seeds and cumin seeds.

Once the seeds splutter, add the ground chutney paste and sauté for 2-3 minutes to remove the raw smell.

Step 2Prepare the Eggs

Crack one egg into a separate bowl.

Whisk it nicely and set it aside.

Step 3Cook the Egg Dosa

Heat a tawa and spread a ladle of dosa batter evenly.

Apply some ghee or oil around the edges and on top for roasting.

Spread 1 tablespoon of the spicy garlic chutney all over the dosa.

Pour the whisked egg over the chutney and spread it evenly.

Sprinkle a little salt, pepper powder, finely chopped onions, and coriander leaves on top.

Flip the dosa to cook the egg side down, pressing gently.

Flip it back over, fold it in the middle, and serve hot.
