Ingredients

For the Dosa Batter:

1 cup Black Gram (Urad Dal)

3 cups Dosa Rice

1 tsp Fenugreek Seeds

as needed Water

to taste Salt

For the Egg Dosa:

1 kg Dosa Rice

2 piece Boiled Eggs

as needed Clarified Butter (Ghee)

as needed Red Chilli Powder

as needed Turmeric Powder

2 piece Onion (chopped)

2 piece Green Chilli (chopped)

Instructions

Step 1Prepare the Dosa Batter

Soak rice, fenugreek seeds, and urad dal in separate bowls for at least 3 hours.

Drain the water and grind the fenugreek and urad dal until the mixture is fluffy.

Grind the soaked rice for about 30 minutes, adding water as needed to reach a thick consistency.

Mix both batters together with salt and let it ferment for 10–12 hours.

Step 2Prepare for Cooking

Ensure your dosa batter is ready (you can use homemade batter or store-bought for convenience).

In a small bowl, beat the eggs.

Chop your onions and green chillies.

Step 3Cook the Dosa

Heat a flat-bottomed dosa pan until it is warm.

Pour a ladle of batter onto the pan and spread it in a circular motion to create a thin crepe.

Add a little ghee or oil around the edges and on top of the dosa for flavor.

Pour about half of the beaten egg into the center of the dosa and let it spread slightly.
