Ingredients

1.2 kg of Butternut Pumpkin (Squash)

2 nos. Carrot (sliced)

2 stalks of Celery (sliced)

2 cloves Garlic (chopped)

2 nos. of Brown onions (roughly chopped)

1 no. Spring Onion Greens

1.2 Litres of Vegetable stock

150 ml of Double cream

2 tbsp Olive oil

to taste Sea Salt

to taste White Pepper

To serve : Grated nutmeg, extra cream, and toasted bread

Step 1Prepare the Vegetables

Peel and thinly slice the carrots. Save any scraps for stock.

Thinly slice the celery stalks.

Thinly slice the garlic cloves; no need for precision as the soup will be blended.

Peel the brown onions, slice into quarters, and roughly chop.

Prep the butternut pumpkin by scooping out the seeds and pulp.

Peel the skin, then slice the pumpkin into even-sized pieces to ensure they cook at the same rate.

Thinly slice the green part of the spring onion on an angle for garnish.

Step 2Sauté the Base

Heat 2 tablespoons of olive oil in a large, heavy-based pot over high heat.
