For garnishing Butter

Instructions

1

Add the milk, egg, melted butter, and the spinach (fresh or frozen) to a blender.

2

Blend the mixture thoroughly until you have a smooth, green liquid with no visible leafy greens remaining.

3

In a mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar.

4

Whisk the dry ingredients together until they are well incorporated.

5

Pour the blended green liquid into the bowl with the dry ingredients.

6

Whisk the mixture until the batter is smooth and well combined. Do not worry if the batter appears slightly foamy from blending.

7

Place a non-stick pan or griddle on the stove over medium heat.

8

Once hot, lightly grease the surface with butter or cooking spray to ensure the pancakes do not stick.

9

Pour the batter onto the hot pan, portioning it to your preferred size.

10

Cook until the edges are defined and you see little bubbles forming on the surface.

11

Use a thin spatula to flip the pancakes carefully, then cook the other side until finished.

12

Serve the pancakes warm, topped with your favorite maple syrup and a pat of butter.
