Ingredients

For the Dough:

1 tsp Instant Yeast

3 tbsp Sugar

150 ml of Lukewarm milk

1 Egg

250 g Whole Wheat Flour

4 tbsp Milk Powder

1 tsp Salt

50 g Unsalted Butter

For the Chocolate Ganache:

75 grams of Chocolate

50 g Fresh Cream

Instructions

1

In a large bowl, combine instant yeast, sugar, lukewarm milk, and an egg (or extra milk if avoiding eggs). Mix well.

2

Add the whole wheat flour (atta), milk powder, and salt to the mixture.

3

Stir until no dry flour remains, then cover with cling film or a damp towel and let it rest for about 45 minutes to an hour.

4

Transfer the dough to a work surface. Knead well until it becomes soft and stretchable.

5

Incorporate the unsalted butter and continue kneading for 10–15 minutes until the dough is smooth, elastic, and passes the windowpane test.

6

Cover the dough and allow it to proof in a warm place until it has doubled in size, which typically takes 1 to 2 hours.

7

Once doubled, punch down the dough and divide it into 8 equal portions.

8

Roll each piece into a smooth ball. Flatten the balls and create a hole in the center to form the donut shape. Let the shaped donuts rest for 15 minutes.

9

While the donuts rest, heat the chocolate and fresh cream together in a microwave or over a double boiler until smooth and creamy.

10

Heat oil in a pan over medium heat. Fry the donuts until they turn golden brown on both sides.

11

Ensure the heat is not too high so the centers cook thoroughly.

12

Once fried, coat each donut with the prepared chocolate ganache.

13

You can finish by decorating with melted white chocolate if desired.
