Ingredients

Fresh Curds (Dahi): 2 cups (whisked)

1 tsp Cumin Powder

1 tsp Ginger-Green Chilli Paste

1 tsp Black Salt

to taste Salt

4 cups Cold Water

1 tsp Oil (tempering)

1 tsp Cumin Seeds

A pinch Asafoetida

2 tbsp Coriander Leaves (chopped)

Instructions

In a large bowl, combine whisked curds, cumin seeds powder, ginger-green chilli paste, black salt, and salt to taste. Mix well.

Add chilled water to the mixture and whisk thoroughly until smooth and frothy.

Heat oil in a small pan. Add cumin seeds. When they crackle, add a pinch of asafoetida (hing) and saute for a few seconds.

Pour the tempering over the buttermilk mixture and mix well. Serve chilled, garnished with finely chopped coriander.
