Ingredients

3 medium Fresh Pineapple (crushed)

to taste Ginger

6 medium Lemon

to taste Turmeric Powder

as needed Water

Instructions

Step 1Prepare the Pineapples

Cut off the head and bottom of the pineapples and peel the skin.

Reserve the skins and the tough central cores in a bowl for boiling.

Chop the remaining pineapple flesh into small chunks.

Step 2Prep Aromatics and Citrus

Peel the fresh ginger and turmeric. Chop the ginger into small pieces and use a mortar and pestle to pound them, releasing their juices.

Slice the lemons in half and juice them. Set the juice aside.

Step 3Clean the Pineapple Skins

Place the reserved pineapple skins and cores in a bowl and cover with water.

Optionally, add a splash of apple cider vinegar to the water.

Use a clean brush to scrub the skins thoroughly to remove all dirt and debris. Rinse well.

Step 4Boil the Base

Transfer the cleaned skins and cores into a pan. Add the ginger, turmeric (fresh or a teaspoon of powder), and enough water to cover the ingredients.

Bring to a boil on medium heat for 15 minutes, then reduce the heat to low and simmer for 45 minutes to an hour.

Once finished, remove from heat and strain. For a more potent base, allow the mixture to sit for an hour before straining.

Step 5Blend the Juice

Place the pineapple chunks into a blender. Add some of the remaining ginger and a portion of the boiled pineapple skin liquid to help the blending process.

Blend until the mixture is completely smooth.

Step 6Strain and Combine

Use a cheesecloth or a wire mesh strainer to strain the blended pineapple mixture into a bowl.

Discard the pulp and combine the strained juice with the previously prepared pineapple skin liquid and the fresh lemon juice.

Step 7Serve

Taste your juice and add sugar or honey if desired. Serve chilled over ice.
