Ingredients

1 cup Almonds

as needed Water

handful Cashew Nuts

handful Pistachios (chopped)

4 pound Cardamom Powder

as needed Saffron Strands

to taste Sugar

Instructions

1

Soak almonds in water, then blend them with fresh water until smooth. Strain the mixture through a sieve to obtain a fresh, homemade almond milk.

2

In a pan, lightly toast a mixture of cashews and pistachios to enhance their nutty flavor. Add cardamom and a generous pinch of saffron to the pan, roasting everything together until fragrant.

3

Take the roasted nuts, cardamom, and saffron, and grind them into a slightly coarse paste. You can add a little bit of the almond milk to help achieve a thick, rich consistency.

4

Pour the prepared almond milk into a pan. Add the ground nut and spice paste to the milk.

5

Add your preferred sweetener, such as sugar, to the mixture. Allow the milk to simmer on the stove, stirring continuously, until the flavors have fully infused and the drink reaches a creamy, perfect consistency.

6

Once hot and aromatic, pour into a glass and enjoy your comforting, dairy-free Kesar Masala Doodh.
