Ingredients

6 Roma tomatoes, diced (approximately 3 cups)

1 large English or hot-house cucumber, diced

½ small red onion, thinly sliced (optional)

¾ bunch of fresh parsley, chopped (including leaves and tender stems)

Kosher salt, to taste

½ teaspoon black pepper

1 teaspoon ground sumac

2 tablespoons extra virgin olive oil

2 teaspoons freshly squeezed lemon juice (plus more to taste)

Instructions

1

Dice approximately six Roma tomatoes and place them into a mixing bowl.

2

Dice one large English or hot-house cucumber. Using this variety is recommended because the skin is thin and does not require peeling, and the cucumbers are typically seedless.

3

Thinly slice a small amount of red onion or shallots and add them to the bowl with the tomatoes and cucumbers.

4

Chop about three-quarters of a bunch of fresh parsley, including the leaves and tender stems, and add it to the bowl.

5

Add a pinch of kosher salt, some freshly ground black pepper, and one teaspoon of ground sumac for tangy depth.

6

Squeeze the juice of one large fresh lemon over the vegetables, ensuring you catch any seeds with your hand. Drizzle with about two tablespoons of high-quality extra virgin olive oil.

7

Mix everything together well. Let the salad sit for a few minutes so the juices from the vegetables can combine with the lemon and oil to create a flavorful dressing, referred to in the video as "salad whiskey."
