Ingredients

4 medium Cucumber

Yogurt: 100 grams (can substitute with regular curd)

1 tsp Salt

Black Pepper: Freshly crushed, to taste

1 tsp Chili Flakes

1 clove Garlic

Lemon/Lime Juice: Juice of 1/2 a lime

Extra Virgin Olive Oil: 2 teaspoons (optional)

Coriander Leaves: A handful, finely chopped

1 Onion (sliced)

Wash four medium cucumbers thoroughly. Using a slicer or a sharp knife, cut them into thin slices and place them into a mixing bowl.

Cut one onion in half and slice it into thin horizontal strips. Add these to the bowl with the cucumbers. If you prefer, you can loosen the onion slices with your fingers.

In a separate bowl, combine 100 grams of yogurt (or regular curd) with 1/2 teaspoon of salt, freshly crushed black pepper, 1/2 teaspoon of chili flakes, and one grated garlic clove. Add the juice of half a lime and 2 teaspoons of extra virgin olive oil. Mix these ingredients together until the dressing is smooth and well-combined.

Finely chop a handful of fresh coriander leaves and add them to the bowl containing the cucumbers and onions.

Pour the yogurt dressing over the cucumber and onion mixture. Gently toss everything together until the vegetables are evenly coated with the creamy dressing.
