Ingredients

2 cup Moong Sprouts (Bean)

1 medium Carrot

1 medium Onion

1 finely chopped Ginger

1 medium Radishes (chopped)

1 medium Tomato

1 tsp Black Salt

Chaat Masala: 1 teaspoon (or as needed)

Lemon Juice : juice 1/2 lemon

Roasted Peanuts: 1/2 cup (lightly crushed)

Coriander Leaves: To taste (for garnish)

Instructions

1

Place the moong sprouts into a steamer. Cover with a lid and steam for 3 to 4 minutes. This process helps with digestion and ensures food safety.

2

Once steamed, remove the sprouts from the heat and allow them to cool down completely.

3

While the sprouts are cooling, chop the carrot, onion, and radish (or cucumber) into small, uniform pieces. Finely chop the green chilli and ginger. Remove the seeds from the tomato and chop it.

4

In a large mixing bowl, combine the chopped carrot, onion, radish, ginger, green chilli, and deseeded tomato.

5

Add the black salt (kala namak), chaat masala, and the juice of half a lemon to the vegetables. Toss well to combine the flavors.

6

Add the lightly crushed roasted peanuts for a boost of healthy fats and extra crunch.

7

Add the cooled, steamed sprouts to the bowl along with fresh coriander leaves. Mix everything together thoroughly.

8

Garnish the salad with a final sprinkle of crushed peanuts and fresh coriander before serving.
